The Cellar & Mirko Pellegrini
The oenological dimension of the restaurant is entrusted to Mirko Pellegrini, sommelier and soul of the cellar, who contributes greatly to the identity of Baccano being an Alma Master in wine communication and marketing management. With a selection of more than 200 labels, the wine proposal is configured as a journey through different territories and cultures, capable of dialoguing with the cuisine in a harmonious and surprising way. His approach combines technical expertise and sensitivity, offering guests a guided and personalized experience in which each pairing is designed to enhance the dishes and amplify their nuances. Wine thus becomes an integral part of the gastronomic narrative, transforming each service into a path of discovery.
