The kitchen bears the signature of Andrea Vailati, a Milanese-born and Romagna-born chef by adoption. With an international background and a creative touch that combines technical rigor and expressive freedom, Vailati builds menus in constant evolution, where each course is a journey between textures, colors and flavors. The menu is based on a Mediterranean vision revisited in a modern key, with great attention to seasonality and dialogue with the territory. The experience is complemented by a selection of wines curated to enhance the harmony of the dishes.

Alto Restaurant was born from a family history of passion and continuous evolution. It was 1995 when Claudio Amadori founded Le Giare in the cellars of his country cottage in Montiano: an intimate place, where traditional local and family dishes were served. Over the years, that project has been transformed, growing between research, taste and contemporary vision, until in 2020 it found a new home: Alto.
